Zucchini Trifolati con Cipolle
This recipe I found while watching Cooking Channel. I am always looking for more meatless meals because I'm trying to do one meatless meal per week but I get tired of making the same 4 dishes. I don't really care for cooked zucchini because it's usually mushy. I hate mushy vegetables! But this looked like the zucchini were nice and browned on the outside but still crisp on the inside. So I thought I'd give it a try! It turned out so great! A couple of the zucchini got a little too cooked, but I think my pan wasn't hot enough. I'm making this again tonight and will make sure my pan is HOT! It was really fresh and tasty though. A great meatless Monday meal for sure! The recipe is here
