Cinnamon Honey Roasted Peaches

A Monday holiday is great for sleeping in and eating a late, dessert breakfast. We had a couple peaches that weren't quite ripe but I knew they'd be perfect for breakfast. Roasting peaches is my favourite way to eat peaches that aren't ripe enough to eat plain. Slice them up, put them on a baking sheet, drizzle with honey and sprinkle with cinnamon. Bake at 375 for about 15-20 minutes depending how unripe they are. It is so easy! And the peaches come out juicy, sweet, just a hint of tartness from the unripe fruit, and the warm cinnamon makes it so balanced and delicious! Served over a fluffy German pancake, it was the perfect holiday breakfast!
