Smoked Gouda and Sun Dried Tomato Pasta

My cousin, Jessica, and I always have so much fun together. She's my best friend! And we have loved living in the same state for a while! I think we've taken full advantage of it! One of my favourite things to do with her, is cook! Getting into the kitchen with someone you love is such a great use of time. We talk about anything and everything, laugh, cry (while cutting onions), and sing/dance while we cook. Plus, we're always on the same page when it comes to the food. It's the best. We love trying new recipes and we love making up our own recipes. This pasta we made last night is one of my favourite recipes we've made up! We decided to do a sun dried tomato cream sauce but when we were at the store, Jess suggested we put some fancy cheese in it. I saw the smoked Gouda and knew that would be the perfect addition to our sauce. It was smoky, creamy, sweet, and a little spicy. Loved it!

Makes 6-8 servings:
Ingredients:
1 1/2 lb chicken breast
Salt and pepper to taste
Olive oil
24 oz pasta
1/4 c drained and chopped sun-dried tomatoes
3-4 cloves garlic, minced
1 1/2 c half and half
1/4-1/2 c smoked gouda
1/4 tsp crushed red pepper flakes

Cut chicken into bite size pieces and season well with salt and pepper. Heat 1-2 T olive oil up in a deep frying pan over medium high heat. When oil is hot but not smoking, add chicken to brown. While chicken is cooking, bring a pot of water to boil for pasta. Add pasta to water and cook according to box directions. Add sun dried tomatoes to chicken. Cook together for a couple of minutes and add garlic. Cook for about 30 seconds and add in half and half. Let it come to a small boil and season with salt and pepper to taste. Start adding Gouda. We started with about 1/4 c but it wasn't quite enough for the flavour we wanted so we ended up adding about 1/2 c. To finish it off, we added 1/4 tsp crushed red pepper flakes. Let it reduce slightly to the thickness you want. Toss the sauce with the cooked and drained pasta. Top with some additional smoked Gouda if desired.
