Honey Glazed Shrimp
Memorial Day is always a big grilling day. Hamburgers, hot dogs, etc. I love it! But when shrimp goes on sale, I gotta do shrimp on the grill! I wanted just to do something light, easy and fresh. I had some fresh thyme on hand and a lemon. Both are great with shrimp! To add a little sticky, sweetness, I used honey. We loved it! Sweet, sticky, and so bright from the lemon and thyme. We had coconut rice and zucchini with it and it was the perfect dinner!
Ingredients:
1 pound shrimp
2 sprigs fresh thyme
1 T olive oil
Salt and pepper to taste
For the glaze:
3 T honey
1 T fresh lemon juice
Remove thyme leaves and finely chop. Marinate shrimp in olive oil, chopped thyme, salt and pepper. Marinate for half an hour. Meanwhile, prepare the glaze. In a small bowl, put honey and lemon juice. Stir well to combine. After half an hour, thread shrimp on skewers. Put on the grill just about 2 minutes on the first side. Flip to the other side. Brush generously with the glaze. After another 2 minutes, flip shrimp again and glaze the other side. Flip again and cook for just about 30 seconds to get the glaze on there.
